Head Chef Joey Deering brings a quiet elegance to the kitchens at The Keadeen, guided by a deep connection to his roots in County Kildare. His menus celebrate the richness of the region, showcasing hand-selected Newbridge meats, river-fresh fish, and seasonal vegetables grown just moments from our doors. Known for his ingredient-led approach, Joey allows flavour and provenance to take centre stage. His signature dish is the pan-seared sea bass — a timeless classic prepared with clarity and care.
